The Protein-First Potluck
Chicken & White Bean Bake
the dish that always comes home empty
Serves 6 · 20 min hands-on · 38g protein a plate
38g protein
9g fiber
high-protein
freezer-friendly
You'll Need
- 3 cups cooked chicken, shredded
- 2 cans white beans, rinsed
- 1 cup low-fat cottage cheese
- ½ cup plain Greek yogurt
- 1 cup shredded mozzarella
- 3 cloves garlic · thyme & sage
- ½ cup panko · 2 tbsp parmesan
Make It
- Heat oven to 400°F, butter a 9×13 dish. Fold chicken, beans, cottage cheese, yogurt, garlic, and herbs until glossy.
- Season boldly and stir in half the mozzarella. Spread into the dish and smooth the top.
- Toss panko with parmesan and melted butter; scatter edge to edge with the rest of the mozzarella.
- Bake 30–35 min until deep gold and bubbling. Rest ten minutes, then slice clean.
Why it works — chicken, white beans, and cottage cheese stack to 38g a serving while keeping it creamy, not chalky. The beans add fiber that protein bars never will.
